These sprouted flax morning glory muffins are packed with grated carrots, apple, pineapple ,coconut, and crunchy nuts . Making them a great choice for breakfast and snacks.
Ingredients

2 cups sprouted flax

¼ c xyltiol
-
1 tbsp baking powder

2 tsp cinnamon
-
5 eggs
-
⅓ melt coconut oil
-
1 vanilla bean seed
-
¼ c pineapple
-
¼ c grated apples
-
¼ coconut
-
¼ c nuts (optional)
-
½ c water
Directions
Mix together dry ingredients
In a blender add in eggs, water, oil, vanilla and blend until frothy
Mix together dry ingredients with frothy mixture. Stir in apples, coconut, nuts and pineapple.
Let rest of a few minutes
Spoon into muffin tins.
Bake at 350 for 12 -15 minutes
